Sweet Potato Recipes

I have 2 delicious recipes featuring
glorious sweet potatoes!
Perfect for your holiday table or any occasion!
Happy Thanksgiving!

Roasted Sweet Potatoes

5 lbs. sweet potatoes, peel and cut
2 sweet yellow onions, slice into 1/2 moons
olive oil
kosher salt
fresh cracked black pepper

Place cut sweet potatoes and onions on a baking sheet. Drizzle with olive oil until coated well - sprinkle on salt and pepper generously. Bake @ 350 degrees for 45 minutes or until the sweet potatoes and onions are golden brown and caramelized.

Sweet Potato Casserole

Mix the following until fluffy and place in a buttered oval baking dish or a 9x13" pan.

3 c mashed sweet potatoes
1/3 c butter, soft
1/2 c evaporated milk
1 c sugar
1 t vanilla
2 eggs

1 c pecans, chopped
1 c brown sugar
1/4 c flour
1/4 c butter, melted

(I double the topping)

Crumble topping over sweet potatoes. Bake @ 350 degrees for 30-45 minutes until browned and bubbly.
