Pumpkins In Vermont

Autumn ~ my favorite season ~
in Vermont ~ my favorite place!

It was a Quintessential Fall in Vermont
and the pumpkins were in abundance~!

The roadside farm stands are fabulous!

These decorated pumpkins adorned with
dried flowers were adorable!

Mini Pumpkin Tarts

~*~
Topping
1/4 c flour
1/4 c brown sugar
1/4 c finely chopped pecans
2 T butter, soft

~*~
Crust
3/4 c butter, soft
2 (3-oz.) pkg. cream cheese, soft
1 1/2 c flour
~*~
Filling
1 (14-oz.) can sweetened condensed milk
1 1/4 c canned pumpkin
1 egg
1 t pumpkin pie spice

Garnish
Whipped cream, if desired

Directions
Heat oven to 375°F. Combine all topping ingredients in small bowl; mix with fork until mixture resembles coarse crumbs.

Combine 3/4 cup butter and cream cheese in medium bowl; beat until well mixed. Add flour; continue beating until dough forms. Divide dough into 36 pieces; place 1 piece into each ungreased mini muffin pan cup. Press dough onto bottom and up sides of cups.
Combine all filling ingredients in large bowl; beat with wire whisk until smooth. Pour about 1 tablespoon filling into each unbaked tart shell; sprinkle each with about 1 teaspoon topping.
Bake for 25 to 28 minutes or until golden brown and set. Cool 5 minutes in pans; run small sharp knife around inside edge of cups to loosen tarts. Remove to wire cooling rack.

Autumn Tea

This magnificent little cup was a gift from my beloved
friend Bonnie - a true treasure in my life~!
Bonnie - otherwise known as Boncetta -
has lavished me with the most exquisite teacups
which I will be sharing soon, but for today the
Canadian shall be showcased because of it's autumn beauty!

tea muffins for a divine treat...
Pecan Pie Muffins
I found this delicious recipe on the Pioneer Woman's site.
These melt in your mouth while being chewy!
~*~
1 c light brown sugar
1/2 c flour
1 c chopped pecans
2/3 c soft butter
2 whole eggs

Preheat oven to 350 degrees.
Grease muffin pan - or use paper liners.
Mix the the brown sugar, flour and pecans.
In a separate bowl, beat the butter and eggs until smooth.
Stir in dry ingredients until just combined.
Spoon the batter 2/3 full into prepared muffin cups.
Bake 20-25 minutes. Cool on wire racks.

KITCHENETTES' BLESSINGS BEYOND


I am posting about the Kitchenettes' this month even though I am out of sequence and behind in our events. We have been busy doing incredible things every month and it is my goal to get everything presented on my blog as soon as possible! But for now...

The Kitchenettes' October Hospitality Meeting was all about blessing others and being a part of something so great and so close to God's own heart. I am in awe of the opportunities this group of young ladies have to shower others with love! The Kitchenettes are now working closely with the Resources For Women in our local area and helping this ministry to surround woman with unconditional love.

The Kitchenettes' are making beautiful gift tubs called "BATHINETTES". These tubs are filled to overflowing with all brand new items that are donated to RFW. All mommies have access to a plethora of classes and trainings to help equip them in caring for their little ones. Once a mama completes 12 courses she is presented with one of these magnificent gifts. Every single item is handpicked and designed in the tub by a Kitchenette girl - we prepare beforehand by praying. It is our faith that the perfect bathinette goes to the right mom and baby and that their lives will be touched and changed forever. We marvel at the clothes and toys selected because we know that one day a little boy or girl will be wearing those very clothes or holding that stuffed animal. It is amazing and indescribable. It is hard not to become emotional and shed tears of joy imagining the impact that will be made in a family.
My cell group ladies are also intimately involved with the Resources for Women ministry. Once a month, to celebrate our birthdays , we are hosting a "baby shower" for RFW. Our first one was in October and we were able to gather three new tubs and an abundant amount of goodies to go inside!

The Kitchenettes each picked out all of their own items and designed their tubs. These are talented girls and I was inspired with their creativity!

Autumn Tea

The Fall is absolutely
my Favorite season!
I love everything about it-
especially steamy cups of tea
served with delicious
Dessert Cakes!
This is my beautiful AuTuMn tea set.
It was given to me as a gift
after I admired it in the
Cracker Barrel Country Store.
...so ExQuiSitE

It fits perfectly with fall festivities!

To accompany our tea ~
homemade sweet goodness...

This delightful treat is the recipe from
one of my dearest friends - Julie -
everything she makes is mouth-watering!
You will love this cake as much as I do

and I promise you will make it often
because everyone devours it!
Enjoy!!

Honey Bun Cake
~*~
1 yellow cake mix
4 eggs
3/4 c canola oil
8 oz. sour cream
Combine together in a medium bowl
- use an electric mixer to blend smoothly.
Place half the batter in a greased 9 x 13 pan.
~*~
1 c brown sugar
1~1/2 t cinnamon
Mix together well and sprinkle on top of batter.
Cover with remaining cake batter - smooth top.

Bake @ 350 for 40 minutes.
Remove from oven and top hot cake with glaze.
~*~
Vanilla Glaze
2 c confectioner's sugar
4 T milk
2 t vanilla
Blend well and pour over entire hot cake.

Little Things

A tiny origami bird...
This is the talent of my almost 18 year old son!
So small...literally a scrap of paper fashioned into
an intricate work of art the size of a penny!
Ryan can literally take any bit of
something and create a masterpiece!
This is amazing to me!

I don't think I am biased because he is my son!
This is truly a wonderful gift!

It is hard to believe that September is gone and we are already almost ending the first week of October. It has been an absolute whirl-wind and I don't see October slowing down!

I am so behind on my blog of life posts and it makes me sad! We have many things to accomplish in this new month and I would like to share everything with my blogger friends!

We are going up to Vermont in the middle of the week and I am so excited! It is my favorite time of year and there is no better place in the fall then Vermont. I love every season there, but it is particularly glorious when the leaves are changing ~ we can go apple picking and the air is crisp! Ahhh....heaven!!

Upon our return, I plan on catching up on my posts...I have 3 months of Kitchenettes, 2 months of Gourmet Club, 2 baby showers, my visit with my Great-Aunt Nanny, many delicious recipes, my adventures as a Home Economics teacher, Gabriella's 2nd birthday ~ plus so much more!!!

This group of young girls are learning the very nature and character of God as they serve people and sharpen their skills in homemaking.
