Sweet Strawberry Bread


Mmmmm....so good!
This recipe is adapted from

Pour a cup of tea and enjoy
a big slice of this heavenly treat! 


Sweet Strawberry Bread

*1 c fresh strawberries, wash & slice
* 1-1/2 c self rising flour
* 1 c white sugar, plus two tablespoons
* 1-1/2 t ground cinnamon
* 1/2 c vegetable oil
* 2 eggs, beaten
* 1/2 t almond extract (not in original recipe)
* 1 c chopped pecans ( I did not add pecans because my children do not like nuts)


Place strawberries in a small bowl and pour two tablespoons of sugar over them. Stir and set aside. In mixing bowl, place flour, remaining sugar, oil, eggs, almond extract and cinnamon. Mix until well combined. Add pecans and strawberries and mix again until well combined and a pretty shade of pink. Pour into greased and floured loaf pan.


Bake at 350 for 45-50 minutes,or until toothpick inserted in center comes out clean.

Allow to cool in pan ten minutes before turning out of pan to cool completely.

  1. This looks delicious and moist!! I wonder if I could omit the cinnamon and just use the almond oil? My husband loves cinnamon in everything, so maybe I'll just leave it in.

  2. Oh my...this looks so moist & full of flavor. I love that you added Almond extract. and I am with your kids...NO nuts for me!
